Love potato salad? Love salmon? How about we do a Michelle Tanner and put em together!!! (Hope you got that reference, the olive cheese ice cream was one of the best episodes!! lol)

Dill-icious Salmon Potato Salad
Potato Salad:
2 lbs. potatoes, peeled
1-3 tsp. aji (Peruvian yellow hot sauce)
2 Tbl. olive oil
1 tsp. turmeric
1 tsp. salt
juice of a lime or lemon
1-3 drops dill essential oil
Salmon Filling:
1 cup cooked and chopped salmon
1/4 cup chopped red onion
1/3 cup chopped celery
1/2 tsp. salt
1/2 mayonnaise
Cook the whole potatoes in water over medium heat until soft. Mash until smooth.
Mix in a bowl the aji, turmeric, salt, and oil until smooth. Add to the mashed
potatoes.
In a bowl, combine all of the salmon filling ingredients until smooth.
Oil an 8-inch baking dish. Spread 1/2 of the mashed potatoes in the oiled baking
dish. Next, spread all of the salmon filling over the potatoes. Then spread the rest of
the potatoes on top of the salmon filling. Cover with plastic wrap and chill until
cold.
